Scrumptiousness!!

So I have been putting my new mixer to work...this is what I have done so far this week :)

Peanut Butter Cookies using Jif Creamy Peanut Butter....mmm they came out soo good and chewy!
Ill be sending a TWO dozen batch out to a dear battle buddy in Iraq !!



Below are a picture by picture process of the Empanadas de Carne, Pollo, and Queso, (Basically Beef Patties (Puerto Rican Style), but I alternated filling the dough (half the batch was home made dough and the other half store bought!) with stewed chicken and Cheese Wiz!! mmmm)
Stewed Chicken, after it was pulled of the bones and left in its sauce to simmer and reduce and the stirring consequently shred the meat :)



Ground Beef! Season and sauteed with Sofrito (recipe upon request), Sazon, Adobo and tomato sauce)

I LOVE to cook and bake, try new and old things, put a twist on the usual and come out with the unusual but yummy!!

I ended up making over 2 dozen lol so I sent a bunch over to my boyfriend's parent's house....hope they enjoyed it.

Today, an important day almost slipped by! Its days like today that I am thankful that I can claim to the title of U.S. Soldier, that I am proud of the decision I made to join the Military, and would do the same thing again if given the chance.  Its a day that I am proud to observe for the father of my child, a Soldier who gave four years of active duty including two year-long tours away from family and friends in Iraq, and four more years as a reservist.  It makes me thankful for the pride I am able to have in my brother, a Marine, who has so far given 9 years of his life to the Marine Corps.  And for my grandfather now deceased who as a very young man, gave his time to the US Army....

to all my brave friends family and those I love dearly home and abroad!!! Today is our day. We go above and beyond to serve our country.....and there are very few things more noble than that!
